RECIPE | OG CHOC DATE COOKIES

These cookies were a creation I came up with after spending the weekend in Margaret River (many moons ago) and overdosing on Gabriel’s choc chip cookies (IYKYK). I wanted to make a healthy version and so almond meal became the feature of this recipe. Enjoyed by many over the years, I’ve upgraded the OG cookies with some collagen powder for a higher protein hit.

GRAB THIS

1 egg
2 ½ cups almond meal
¼ cup collagen powder
3 tablespoons of butter*
1 tablespoon almond butter
¼ cup coconut sugar
4 dates, chopped
¾ block of broken up bits of dark choc (Lindt is great)
Chunky sea salt for the top

DO THIS

  1. Preheat oven to 180°C.

  2. Mix almond meal and collagen powder together.

  3. Melt butter, then add coconut sugar, almond butter and egg. Whisk.

  4. Pour wet mix into dry mix, then add the dates and choc to stir up.

  5. Roll into palm-sized balls. Press out onto a baking tray. Top with salt.

  6. Bake for 15 minutes, or ‘til golden brown.

  7. Allow to cool for 10 or so minutes.

  8. Store really well in the fridge for a week. If they last that long!

*This used to be 3 tablespoons of coconut oil, feel free to do either!
