RECIPE | BLACK BEAN BROWNIES

This recipe is all-time. It was created by a dear friend of mine, Jayne, in the preparations for my second eBook way back when. Not sure of a client or patient I have sent this to that hasn’t enjoyed the chocolatey goodness. It’s equal parts goey, sweet, and morish. And, it has a plethora of health benefits from the cacao (magnesium, B vitamins, tryptophan) and the black beans (fibre, folate, magnesium, iron). It’s the prime player in the lead up to ‘that time of the month’ because it satiates those cravings and provides some of the additional nourishment needed by the body at this time. If it couldn’t get any better, it takes less than 25 minutes to make and cook this recipe. It’s a one-bowl pony and ingredients aren’t too extravagant. Enjoy, you deserve this one.

GRAB THIS

1 can organic black beans
3 eggs
⅓ cup raw cacao powder
1 T almond butter
3 T coconut oil
2 T coconut flour
¼-½ cup coconut sugar
½ t baking powder
¼-½ block dark choc (I use Sea Salt Lindt)
1-2 T natural peanut butter (optional extra)

DO THIS

1. Preheat oven to 170°C.
2. Everything into a food processor/Thermomix and blend ‘til smoothie. Ideally, if you don’t have a food processor, that’s fine, you’ll just need some elbow grease in your mixing—you got this.
3. Stir through the chocolate chunks after you’ve whizzed it.
4. Pour into a small baking tin and if you’d like you can swirl that natural peanut butter through the top.
5. Cook for 15-20 minutes in the oven. You want to have a bit of softness still going on in the centre, but not collapsing. If it’s cooked through, it’s overdone. It’s a fine balance, so keep an eye on it and allow it to cool for 10 minutes before digging in so it isn’t a right mess.

You can store this for up to a week if it’s kept in the fridge. Consume within 2-3 days if it’s just stored out on the bench.

To make vegan: Just remove the eggs. I have accidentally forgotten eggs numerous times and it wasn’t a big deal. You could use 2 flax eggs if you’d like to.
